How do you store and serve macarons?

Keep macarons in the refrigerator for up to a week. Take them out 15 to 20 minutes before you eat them, so they come up to room temperature. You can freeze them for up to three months, but thaw them in the fridge first, never on the counter.

Up to a week. Keep them in the fridge until you're ready to serve them.

Can you freeze macarons?

Yes. They can stay frozen for up to three months. My own cutoff for macarons I plan to sell is one month, so for the best taste, eat them sooner.

How do you thaw frozen macarons?

Move them straight from the freezer to the refrigerator. Don't set them on the counter. Moisture on the shells can ruin them, and going from the freezer to a warm room makes them sweat.

Once they've thawed in the fridge, they're ready to serve or to box up.

When should you take macarons out to eat?

Do macarons need to rest?

Yes. After a batch is baked, the macarons rest in an airtight container in the refrigerator for 24 hours to mature. I bake to order, so I ask for at least a week.
